Dessert Nachos
Ingredients
- 1 bag Semi-sweet mini chips
- 1 tsp Coconut oil other oils work
- 6 ounces tortilla chips 1 bag
- 2 cups diced strawberries
- 1/4 cup sugar
- 1/2 tsp cinnamon
- avocado oil spray
Instructions
- Put the coconut oil and all but 1/4 cup chocolate chips in a microwave save bowl or large measuring cup.
- Heat in the microwave 1 minute then stir until smooth, if needed, microwave another 30 seconds to make sure it's completely melted
- For the nachos, lay out the chips on a cookie sheet or the platter you will be serving them on
- Spray chips lightly with the avocado oil spray
- Meanwhile, combine sugar and cinnamon in a little bowl
- Sprinkle the cinnamon sugar mix evenly over the chips
- Drizzle chocolate over the cinnamon sugar chips
- Top with strawberries and sprinkle with remaining 1/4 cup mini chips

Can I use frozen strawberries?
I would not recommend using frozen strawberries for this recipe as frozen fruit normally contains excess moisture. The extra water in frozen strawberries will not mix well with the chocolate and cause the chips to go soggy. If you don't have fresh strawberries, feel free to swap with other fresh berries or fruit.
Can I make homemade tortilla chips?
Yes, if you have the time, you can use flour tortillas or corn tortillas to make homemade tortilla chips. This is great if you want thicker, stronger chips to hold more toppings.
Simply fry the chips in melted butter or oil until they harden and sprinkle with cinnamon and sugar. You can store leftover homemade cinnamon sugar chips in an airtight container.
