Ingredients

  • 8 ounces orange baby carrots
  • 8 ounces celery sticks
  • 8 ounces yellow baby carrots
  • 8 ounces purple baby carrots
  • 8 ounces broccoli florets
  • 1 medium cucumber, sliced into discs
  • 1 red pepper, sliced into sticks
  • 8 ounces cherry tomatoes
  • 8 ounces cauliflower florets
  • 1 avocado, sliced in half
  • 4 ounces red pepper hummus
  • 4 ounces ranch dip

Instructions

  • Arrange all the vegetables on your medium sized board by color
  • Add the dips to the board and enjoy

Notes

Pro tip: Wash and cut your vegetables ahead of time so they have time to dry before adding to the board. This will avoid excess moisture on your charcuterie board.

Make ahead: You can make this board 2-3 hours ahead of time and store in the fridge covered in plastic wrap until you're ready to serve. This is a great way to save precious time in the kitchen.

  • Get cheesy - Although white isn't a color of the rainbow, feel free to add feta cheese, cheddar cheese, or your favorite type of cheese to compliment the vegetables. You could also add a snowman cheeseball but remove the snowman details.
  • A fruit board - If you'd rather serve a rainbow fruit board, you totally can. Use a variety of different colored fruits and arrange them the same way you would the vegetables.
  • Different dips - You can use classic hummus, blue cheese dressing, spicy chipotle mayo, guacamole, pumpkin feta dip, etc.
