- 2 1/4 cup powdered sugar
- 2 T butter, softened (dairy free butter works as well)
- 2 T heavy cream (or dairy free heavy cream)
- 2 tsp peppermint extract
- 18 ounces milk or dark chocolate chips (I recommend Guittard, dairy free works as well)
- 1 T coconut oil
In a stand mixer, combine all ingredients except chocolate using a paddle mixer and mix on high until dough comes together and is no longer sticky (if needed, add a few teaspoons of powdered sugar until no longer sticky)
Place dough onto a long piece of plastic wrap in a 1 1/2-2 inch cylinder shape then roll and secure the ends of the plastic wrap then freeze for 20 minutes
Remove from the fridge and take off the plastic wrap then slice into small (1/4 inch) discs
Meanwhile, in a glass bowl heat the chocolate with coconut oil in 20 second intervals in the microwave until completely melted, stirring in between
Once the chocolate is melted, proceed to dip individual patty discs completely into the chocolate carefully using a fork then place on wax paper to cool
Can I make these patties larger?
Yes, simply roll your filling cylinder larger. You make get less but they sure are fun in a king size! Extra patties can be frozen for future use.
Can they be made dairy free?
Absolutely! Just swap out the butter for dairy free butter, the cream for dairy free heavy cream and the chocolate for dairy free chocolate. We've done it many times and they are great!

Storing leftovers: If you have leftovers, place them in an airtight container in the refrigerator for up to five days. You can also freeze leftovers. They’ll stay good in the freezer for up to three months.
