Ingredients

Cookies

  • 2 cups butter softened
  • 2 1/2 cups sugar
  • 6 eggs
  • 7 cups flour
  • 2 teaspoons baking soda
  • 4 teaspoons cream of tartar
  • 1 tablespoon vanilla extract
  • 4 teaspoons almond extract

Frosting

  • 8 ounces cream cheese
  • 2 tablespoons butter softened
  • 16 ounces confectioners sugar 1 package
  • 2 teaspoons vanilla extract

Instructions

Halloween Cookies

  • In a mixing bowl, cream together the softened butter and sugar until fluffy. Then, mix in the eggs, vanilla extract, and almond extract, beat until everything is completely combined.
  • In another mixing bowl bowl, whisk together the flour, baking soda, and cream of tartar.
  • Slowly add all of the dry ingredients to the wet ingredients, mixing on low speed until a soft cookie dough forms. Avoid over mixing so the cookies stay tender.
  • Divide the dough into two balls, place into two bowls, and cover the bowls with plastic wrap or a kitchen towel. Refrigerate for at least 2 hours.
  • After the dough has chilled, roll out the chilled dough to 1/4-inch thickness on a floured surface. Use cookie cutters to cut out pumpkins or other halloween shapes.
  • Place the cookies on a prepared baking sheet, leaving space between each cookie. Bake at 350°F for 8-10 minutes, or until the edges are golden brown. Let cool completely before frosting.

Homemade cream cheese frosting

  • In a large mixing bowl or stand mixer. Beat the cream cheese and softened butter together until smooth and creamy.
  • Slowly add the powdered sugar and vanilla extract, mixing until the frosting is fluffy and you get the consistency you want.
  • Frost the cooled cookies, add sprinkles, and any other decorations you'd like!

Notes

Storing: If you somehow have leftovers, wait until the cookies have set and store them in a ziplock baggie or airtight container. Separate the cookie layers with parchment paper to prevent the frosting from spreading. They'll last on the counter for 4-5 days or in the fridge for up to a week. 
Freezing: These cookies are super freezer-friendly before you decorate them. Bake the cookies, let them cool, and store unfrosted cookies in a freezer safe bag or container for up to three months. When you’re ready to enjoy, thaw them at room temp for a few hours and frost (I recommend making the frosting fresh).
