Sugar Cookie Dough
- 1 1/3 cups butter, softened
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 4 cups flour (I use King Arthur gluten-free flour)
- 1 teaspoon salt
- 2 teaspoons baking powder
Frosting
- 8 ounces cream cheese
- 3 tablespoons butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Topping
- 1 pint fresh strawberries, sliced
- 16 fresh blackberries
- 16 fresh blueberries
Sugar Cookie Dough
Preheat the oven to 350 degrees
Beat the butter and sugar until light and fluffy
Add vanilla and almond extracts then slowly add flour 1 cup at a time
Add salt and baking powder and mix until combined well
Spread and press into a greased cookie sheet and bake at 350 degrees for 18 to 22 minutes or until golden brown
Cool completely, about 45 minutes
Frosting
Beat cream cheese and butter until soft and fluffy about 1-2 minutes
Add vanilla and lemon juice and beat to combine
Add the powdered sugar and beat 2-3 more minutes until light and fluffy
Topping
Assemble American flag by alternating blueberries and blackberries in a small row in the upper left hand corner to make the "stars" of the flag
Place sliced strawberries in a line with space in between each line to create the American flag "stripes"
Storage - Allow the dessert to cool to room temperature. Then, store it in the fridge in an airtight container for 3-4 days.
It is easier to store if you cut the pizza into individual slices. It will take up less space that way.
Freezing - You can freeze the cookie dough for up to three months when it is wrapped in plastic wrap and sealed in an airtight container. Cream cheese frosting can also be frozen for up to three months.
When ready to make the pizza, take the dough and frosting out of the freezer and put it in the fridge. I let it thaw out overnight.
