Groundhog Day Cupcakes
As we are nearing the quirky tradition of groundhog day, why not add a delicious twist to the celebrations. These Groundhog Day Cupcakes are sweet, chocolatey treats topped with edible groundhogs. A fun dessert that the kids will absolutely love!

Groundhog Day Cupcakes
- 16-21 ounces gluten free chocolate cake mix
- 3 eggs
- 1 cup Dr Pepper or other soda
- 1/2 cup melted butter
Chocolate Soda Frosting
- 1/3 cup Dr. Pepper or other soda
- 1/2 cup butter
- 6 tablespoons cocoa powder
- 1.5 pounds powdered sugar
Edible Groundhogs
- 12 large Tootsie rolls
- white and black frosting
- black candy balls
- white and brown sprinkles
For the cupcakes
Preheat oven to 350°
Mix cake mix, eggs, 1 cup soda and 1/2 C melted butter together
Pour into 12 paper lined cupcake tins
Bake at 350 degree for 12-15 min
Allow to cool then using a little circle cutter, remove middle of the cupcake but not all the way to the bottom
Fill hole with white or brown sprinkles or marshmallows (white for 6 more weeks of winter, brown for spring is coming)
Frost with soda frosting below
For the frosting
Bring 1/3 cup soda, 1/2 cup butter, 6 tablespoons cocoa to a boil
Pour the hot mixture over the powdered sugar and mix well
Add Dr Pepper or soda to thin frosting as needed
Frost cooled cupcakes
Add an edible groundhog to the top of the cupcake
Edible Groundhogs
Tear off two small pieces of tootsie roll and then shape into "ears" and add to the top of the full tootsie roll
Use white and black frosting to make the groundhog's eyes and white to make teeth
Add black candy ball for nose
Pro tip: Set your fun cupcakes on a wire rack for faster cooling!
Top tip: Use a piping bag to frost the cupcakes perfectly!

Yes you can make these cupcakes dairy free! Swap classic cake mix for gluten-free cake mix, butter for vegan-butter, and cream cheese for vegan cream cheese!
Can I use different sodas to make these?
Yes you can use root beer, sprite, coke, etc. in these soda cakes! Follow the same directions.
